Chutney Sandwich-Bombay style

This sandwich can be served as Lunch, cut in to small size and serve for snack.

You can prepare it ahead of time and keep in the refrigerator-properly covered.

I usually keep Chutney ready in tiny containers in the freezer and use it as needed.

Cilantro Chutney
    To Make Chutney
  • 2 cups Chopped Cilantro or Hara Dhania
  • 0.25 cups Peanuts- roasted unsalted or salted
  • 2 teaspoons Ginger Chili pasterano or Jalapeno peppers-cut in 1" pieces
  • 2 tablespoons Dhana Jeera powder
  • 1 teaspoon or less of Salt
  • 1 teaspoon or less of Raw sugar
  • 3 tablespoons Fresh Lemon Juice
  • 1.5 inch peeled of Fresh Ginger chopped (Cut in to pieces)
  • 1 teaspoon Oil -to use later
  • 1 tablespoon Shredded Coconut (Thaw-if frozen)
  • Make the Sandwich
  • 1 Bread- sliced of your choice (Soft-remove crustt)
  • 6 Firm Tomatoes sliced (Sliced)
  • 4 Persian Cucumbers (thinly sliced-use small thin ones)
  • 1/4 teaspoons each salt and pepper (or per taste)
  1. collect all items and first make chutney

    Put Cilantro, Chilies, Ginger, and all other items Except Oil in Blender. Blend at medium speed, you may have to stop the blender and mix the ingredients. Chutney should be like a spreadable paste, you may need to add just a little water

  2. Once the paste is done, put it in the serving bowl or store in a jar adding the oil.

  3. Make Sandwiches
  4. Lets make the Sandwich: You can arrange all slices on a tray, (spread just a little soft butter-not for vegan) Optional. Now spread the slices with chutney -spread thin layer. Add cucumber and Tomato slices, sprinkle with salt and pepper, and put both sides together. It may seem like too many things and may be difficult to put them together.
  5. Add sliced Cucumbers, Sliced Tomatoes , sprinkle with salt and pepper and put them together, Press down slightly so the sandwich keeps together. Cut in to four pieces for snack style Sandwich or, keep them whole.
  6. If you are not Vegan - you can use butter to spread on the bread first, can add slices of cheese as well.
  7. put hte sandwiches together and keep them covered in the refrigerator. You can cut each sandwich in to 4 pieces for snacks.

Chutney Sandwich has been very popular in India. It is also sold by Hawkers and, have many verieties.
