Chickpea Tortillas-Puda- a Gluten Free Breakfast

In recent years-since more people are looking for  gluten free dishes, I thought it would be a good idea to share this recipe.This dish is very common among Gujarati Community-this dish is called Pudla-or Puda. This is a spicy savory Breakfast. I have called it Tortilla because it looks very similar to Spanish tortilla.

Chickpea flour is used in many dishes throughout India.

You can make this item just plain or with Onions, Tomatoes, Cilantro etc.

I like the one with added vegetables.

Very simple and quick. This recipe makes 4 Omelets. Chick pea flour is filling.

More and more people are now aware of Chick peas flour. You can buy this flour in an Indian Market easily-this flour may be available in specialty markets where the bulk items and health related items are sold.

In this dish I have used chopped jalapeno about 1/2 as I like the green  pepper.

Ingredients
  • 1.5 cup Chick Pea flour
  • 0.5 cups Water
  • 0.5 Purple Onion Chopped
  • 1 Tomato of Chopped-I use Roma Tomato-firm
  • 0.5 Chopped Cilantro
  • 1 teaspoon Salt
  • 0.25 teaspoons Turmeric
  • 2 tablespoons Plain Yogurt
  • 0.5 teaspoons Baking Soda
  • 1 tablespoon Cooking oil
  • 3 tablespoons Cooking oil-may need less.-to use in skilette
Instructions
  1. In a deep bowl, mix Chickpea flour, water, Tomatoes, Onions, Cilantro, 1 Tablespoon Oil, Salt, Yogurt, Turmeric and Chili powder.

  2. Whisk the mixture to make a smooth batter-the batter should similar to pancake batter. Add baking soda and mix well.

  3. Heat about 9" Skilet at medium heat, add about 1/2 teaspoon of oil and spread on the the skillet, Pour about 1/2 cup of batter, turn the heat slightly low . Cook for about 1 to 2 minutes or until slightly brown- Add 1/4 tea spoon oil on top, then turn it over. Cook again for about a minute or two.

  4. The pancake will cook and bubble

  5. Gently turn it over. cook another 1/2 minute and serve in a plate with your favorite Chutney or sauce.
