Fresh Turmeric Pickle

Turmeric is a root spice and fresh one is available in many fresh Produce stores and markets. The price per pound is high but to try, you only have to buy 1/4 pound or about 6 to 8 little roots. Select firm ones without dark spots. These roots are about 2 to 3 inches in length. Turmeric has been a been considered an “A Cure and a preventer ” for may conditions and ailments. This Pickle is very easy to make and does not need processing-cooking or preserving. Being a root it has a little mealy taste but once you add the salt and lemon juice, it really has a good taste. This fresh made pickle can last for over a week in the Refrigerator. You can use this as a topper on Sandwich, as a condiment or just take it as a snack-you may want to try a little at a time. It is a great – healthy snack when you top this on your favorite cracker.

Ingredients
  • 8 Roots of Fresh Turmeric
  • 0.5 teaspoons Salt (you can use Sea salt, Pink salt or Table salt)
  • 0.25 cups Fresh Lemon Juice (I use the ones with thin skin-you can also use Lime)
  • 1 teaspoon Oil (I use Grapeseed oil)
Instructions
  1. Wash the little roots and remove skin. put them back in water

  2. Shred the roots in a bowl

  3. Add salt and, Lemon juice and mix gently.

  4. Put the mixture in an air tight Jar and pour oil.
